    At Curlew Dairy in Wensley, North Yorkshire, cheesemakers Samantha and Ben Spence use a 100-year-old local recipe.

Curlew Dairy make traditional farmhouse Wensleydale cheese in their Micro dairy using milk from a small local farm. Last year the dairy produced 20 tonnes of cheese , following a 100 year old traditional recipe of making Wensleydale cheese which would traditionally been used by local farms in the area.

    Writer Samanta Schweblin, photographed in Berlin-Kreuzberg.
    Schweblin is an Argentine Spanish-language author, who has published three collection of short stories, a novella and a novel, besides having stories published in anthologies and magazines. Her debut novel, Fever Dream (2014, translated by Megan McDowell in 2017), won the Shirley Jackson award for best novella and was shortlisted for the Booker International prize. SchweblinÕs second novel, Little Eyes, out now in paperback, imagines a reality in which people keep ÒkentukiÓ Ð small, animal-shaped devices with cameras for eyes, controlled by an unknown user somewhere across the globe. She lives in Berlin.
